Foodservice and Retail, DAG Notes, March 25th
- Not commercialized- makes us more unique and true to this campus
o But yet need good food and good service- balance
- Change menu’s!
- Fresh food- small grocery
o Not very big, but can tap into local food resources
- Esp with people producing produce from small plots in community gardens
- Also, farmers market (larger scale)
- Marketplace concept
o ”food court” area connected to a C-store somehow
- Close proximity to Orchard for farmers so farmers can sell off extra produce to mini grocery and production kitchen
- “My favorite part of anywhere is where the people are”
- Fresh Bakery (not plastic case over 5 doughnuts!)
- Convenience issues
o Central production area where one can get many different things
o Connectivity to outdoors
o Food areas centrally located in building
o Rail station- quick eats, coffee, newspaper stand, leisure area
- Boomerang shape is nice because it has a great outdoor focal point. Is there an indoor focal point?
